Love at First Bite
Steam rises off the pan as the sauce bubbles, thick and glowing amber-orange, clinging to every ridge of the rigatoni. The first bite hits with smoky Cajun warmth, then settles into something creamy and comforting, sun-dried tomatoes and juicy grape tomatoes adding little bursts of sweetness against the spice, melted vegan cheese pulling in soft ribbons with every twirl. This is the dish that turns a regular Tuesday into something worth savoring, the kind of meal that gets requested again before the plates even clear the table.
Origin Story
Cajun cuisine grew out of Louisiana's rich culinary tradition, blending French technique with bold, rustic spice blends built for hearty, one-pot cooking. Italian cream sauces bring their own centuries-old legacy of transforming simple ingredients into something luxurious. This dish brings the two traditions together, letting smoky heat and creamy richness share the same plate.
Ingredients
Ingredients:
1 lb rigatoni pasta
1 cup raw cashews, soaked in hot water for 15 minutes
1 cup vegetable broth
3 tablespoons olive oil, divided
1 small yellow onion, diced
1 red bell pepper, half diced and half thinly sliced
1 yellow bell pepper, half diced and half thinly sliced
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup grape tomatoes, halved
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1 teaspoon red pepper flakes, plus extra for garnish
1/4 cup nutritional yeast
1/2 cup shredded vegan mozzarella or white cheddar
Salt and black pepper, to taste
Fresh basil leaves, torn, for garnish
Fresh parsley, chopped, for garnish

Substitutions
Cashews: Sub raw sunflower seeds for a nut-free version with a similar creamy texture.
Rigatoni: Sub penne or fusilli for a similar sauce-catching shape.
Vegan mozzarella: Sub grated vegan parmesan for a sharper, saltier finish.
Remix Notes
Toss in sautéed mushrooms or wilted spinach for extra bulk and nutrition. Blackened tofu or tempeh strips on top turn this into an even heartier main.
How to Make
Bring a large pot of salted water to a boil. Cook the rigatoni according to package directions until al dente, about 11-12 minutes. Reserve 1 cup of pasta water, then drain.
While the pasta cooks, drain the soaked cashews and blend them with the vegetable broth until completely smooth. Set the cashew cream aside.
Heat 2 tablespoons of olive oil in a large deep skillet over medium heat. Add the diced onion and the diced portions of red and yellow bell pepper, and sauté for 5-6 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Stir in the sun-dried tomatoes, half of the grape tomatoes, Cajun seasoning, smoked paprika, oregano, and red pepper flakes. Cook for 2 minutes to bloom the spices and soften the tomatoes.
Pour in the cashew cream mixture and nutritional yeast, stirring to combine. Bring the sauce to a gentle simmer and cook for 4-5 minutes until it thickens slightly.
Add the drained rigatoni directly into the skillet, tossing to coat every piece in the sauce. Splash in reserved pasta water, a few tablespoons at a time, until the sauce reaches a silky, clingy consistency.
Sprinkle the shredded vegan cheese over the pasta and gently fold it in until it starts to melt and turn glossy.
Season with salt and black pepper to taste. Drizzle the remaining 1 tablespoon of olive oil over the top for shine.
Transfer to serving bowls and top with the sliced red and yellow bell pepper strips, remaining grape tomato halves, a pinch of extra red pepper flakes, torn fresh basil, and chopped parsley. Serve immediately while hot.

Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over low heat with a splash of vegetable broth or water to loosen the sauce back up, since the cashew cream thickens significantly once chilled. Add a fresh sprinkle of vegan cheese after reheating to restore that just-melted look. Avoid microwaving on high heat, which can cause the sauce to separate.
FAQ
Why does my cashew cream sauce look grainy instead of smooth?
Soaking the cashews in hot water (not cold) for the full 15 minutes softens them enough for a high-speed blender to break them down completely. A regular blender may need an extra 5-10 minutes of soak time.
Can I make the sauce less spicy without losing flavor?
Yes. Reduce the Cajun seasoning to 1 tablespoon and skip the red pepper flakes entirely. The smoked paprika still carries a rich, smoky depth without heavy heat.
Why did my vegan cheese not melt smoothly into the sauce?
Vegan cheese melts best over gentle, residual heat rather than direct high heat. Folding it in off the burner or on low heat after the sauce thickens keeps it glossy instead of clumpy.
