Type: Vegan/Vegetarian
Servings: 2 glasses (8oz each)
Estimated Cost: $8 - $12
Ingredients
Ingredients:
4 cups fresh watermelon, cubed and seeded
1 tablespoon fresh lime juice
1 tablespoon honey or agave nectar
8 fresh mint leaves, plus extra for garnish
½ cup sparkling water
Ice for serving
Lime wedges and fresh mint sprigs for garnish
Pinch of sea salt
Substitutions
Fresh watermelon: Seedless watermelon works directly and saves prep time - widely available at most grocery stores spring through summer.
Honey: Agave nectar substitutes seamlessly and keeps the recipe fully vegan.
Sparkling water: Coconut water substitutes beautifully for a still, naturally sweet version with added electrolytes.
Instructions
Add watermelon cubes to a blender and blend on high for 30 - 45 seconds until completely smooth. Pour through a fine mesh strainer into a large bowl or pitcher, pressing gently to extract all the juice. Discard the pulp.
Add lime juice, honey or agave, and a pinch of sea salt to the watermelon juice and stir well until fully combined.
Place 4 fresh mint leaves in the bottom of each glass and press gently with a muddler or the back of a spoon to release the mint oils - press firmly enough to bruise the leaves without tearing them completely apart.
Fill each glass generously with ice and pour watermelon juice mixture over the top.
Add a splash of sparkling water to each glass for a light, fizzy finish and stir gently.
Garnish with a fresh mint sprig and a lime wedge on the rim. Serve immediately.
Love at First Sip
That first sip is pure summer - bright, juicy watermelon sweetness hitting clean and fresh, with cool mint rising right behind it. The lime adds a sharp citrus edge that keeps everything lively, and a slow finish of honey ties the whole glass together with a gentle, floral sweetness. Light, vibrant, and completely addictive.
Origin Story
Watermelon has deep roots across the African continent, originally cultivated in the Kalahari Desert thousands of years before it traveled the world through trade and migration. It arrived in the Americas through the transatlantic slave trade, where enslaved Africans grew and tended it - a fruit that carried both sustenance and memory across generations. Soul Foodie honors that history with a drink that celebrates watermelon for exactly what it has always been - nourishing, beautiful, and deeply ours.
Remix Notes
Freeze watermelon juice into ice cubes and use them in place of regular ice - as they melt they deepen the color and flavor of every glass. Add a thin slice of fresh jalapeño muddled with the mint for a spicy watermelon version with a slow, building heat. Swap sparkling water for coconut water for a naturally sweet, electrolyte-rich variation.

Watermelon is one of nature's most powerful hydrating foods - made up of over 90% water with natural electrolytes that replenish your body from the inside out. On a hot summer day, this mocktail does the work of keeping you cool, refreshed, and genuinely nourished in every glass.

Storage & Reheating
Store fresh watermelon juice in a sealed mason jar in the refrigerator for up to two days - stir well before using as natural separation occurs. Add sparkling water and mint fresh to order for the best flavor and fizz. Assembled glasses deliver their best flavor and presentation immediately after building.
FAQ
My watermelon juice came out cloudy - is that normal?
Completely normal. Fresh watermelon juice naturally carries some pulp and fiber that creates a cloudy appearance. Strain a second time through a fine mesh strainer lined with cheesecloth for a clearer, more vibrant juice if presentation matters for your occasion.
Can I make a large batch for a cookout?
Absolutely. Blend and strain the full watermelon juice up to two days ahead and store in a large covered pitcher in the refrigerator. Add sparkling water, fresh mint, and ice fresh when serving to keep the fizz and color at their best.
What size watermelon do I need for this recipe?
A small personal watermelon delivers more than enough juice for this recipe with some left over. Look for a watermelon that feels heavy for its size and has a creamy yellow spot on the underside - that yellow patch indicates it ripened fully on the vine and delivers the sweetest juice.
