Instructions
Melt vegan butter in a skillet over medium heat. Add brown sugar, vanilla bean scrapings, cinnamon, nutmeg, and sea salt. Stir until the sugar dissolves and the sauce thickens slightly, about 2 minutes.
Add banana slices and toasted pecans, folding gently to coat. Remove from heat and let the filling cool completely before rolling.
Pour avocado or vegetable oil into a deep skillet or heavy-bottomed pot to a depth of 2-3 inches. Heat to 350°F.
Lay one phyllo sheet flat on a clean surface. Spoon 2-3 tablespoons of cooled filling near the bottom edge.
Fold in the sides, then roll tightly upward. Seal the edge with a light brush of water. Repeat with remaining sheets and filling.
Working in batches, carefully lower rolls into the hot oil. Fry 2-3 minutes per side until golden. Transfer to a paper towel-lined plate to drain.
Arrange 2 rolls on each plate. Drizzle generously with chocolate sauce and dust with powdered sugar.
Top with a scoop of vegan vanilla ice cream or coconut whipped cream (optional)
Love at First Bite
This mousse does not announce itself quietly. The first spoonful lands smooth and impossibly rich, dark chocolate front and center, then something unexpected moves in - a gentle warmth, a subtle earthiness, a sweetness that feels almost caramel-like without being cloying. Topped with fresh berries or curls of dark chocolate and this dessert will look like something a pastry chef labored over for hours.
Origin Story
Chocolate mousse carries centuries of French culinary tradition, a dessert built on the alchemy of whipped cream, eggs, and fine chocolate folded together into something ethereal. This version honors that legacy while grounding it in something deeper - the avocado, Medjool dates - prized across North Africa and the Middle East for their natural sweetness - and cayenne powder, whose roots expand across West Africa, the Caribbean, and the American South. This mousse brings those histories together in a single delicious bowl.
Remix Notes
Add one additional Medjool date or an extra tablespoon of maple syrup for a more dessert-forward sweetness. Also, consider doubling the espresso powder to 2 teaspoons for a bold coffee-chocolate experience that hits like your favorite café drink.
Soul Notes
Some desserts satisfy a craving and some desserts restore you - this mousse does both. The silky smoothness feels genuinely soothing, the deep chocolate richness delivers that full comfort moment, and the subtle warmth from cayenne keeps every bite interesting. Light enough to feel refreshing in summer, indulgent enough to anchor a winter evening, this one earns a permanent place in your rotation.
Storage & Reheating
Press plastic wrap directly onto the surface of each serving before refrigerating to prevent browning and store for up to 3 days. For longer storage, transfer to an airtight freezer-safe container and freeze for up to one month, then thaw overnight in the refrigerator and stir gently before serving.
FAQ
Can I taste the avocado?
A perfectly ripe avocado disappears completely into the chocolate. The cocoa, dates, and vanilla dominate the flavor profile entirely. Guests will never guess the base ingredient without being told.
Is this recipe vegan?
Every ingredient in the base mousse and both topping options runs fully plant-based and vegan. Check your chocolate shavings label to confirm no dairy if strict vegan is a priority.
Can I use regular cocoa instead of dark cocoa?
Regular unsweetened cocoa works well. The mousse will taste slightly lighter and less intense. For maximum depth, seek out Dutch-process cocoa or a blend with black cocoa powder.
